Leftover Spaghetti Makes A Great Spaghetti Pie
Here is great recipe for using up leftover spaghetti. As a matter of fact it is so wonderful that I don’t even wait to have leftover spaghetti. I found this recipe in a quick and easy cookbook but it is actually credited to famed cookbook author Molly Katzen. It is such an easy recipe your kids can help too. They can mix the spaghetti with the sauce in a big bowl. It is a vegatarian recipe but you can add meat or chicken if you desire.
Prep time 15 minutes Cooking time 30 minutes
Ingredients
Olive Oil
4 cups leftover spaghetti ( or any cooked pasta)
1 and 1/2 cups tomato sauce
10 fresh basil leaves, or 2 teaspoons dried (optional)
1/2 cup grated Parmesan cheese
1/4 cup leftover vegetables, such as olives, mushrooms, peppers (optional)
1/2 cup grated Monterey Jack or mozzarella cheese
Directions
Preheat the oven to 350 degrees. Coat a 9-inch pie pan with a little olive oil (use a pastry brush or your fingers), then set it aside. Place the spaghetti and the sauce in a large bowl, and stir until the spaghetti is coated with the sauce. Working over the bowl, snip the basil with scissors or tear it by hand. Sprinkle in the Parmesan and stir well. If you want to get creative, toss in other leftovers from your fridge, such as olives or mushroooms -anything that seems appetizing.
Spread the spaghetti into the oiled pie pan and pat it down with the back of a wooden spoon. Sprinkle the Monterey Jack or mozzarellla cheese on top and shake on a litttle extra Parmesan. Bake for 20 t0 30 minutes, or until the pie turns brown and crispy on top. Cut into wedges and serve immediately with extra Parmesan cheese and tomato sauce. Serves 4.
Extra Tips
- If you are cooking the spaghetti and not using leftover pasta, simmer your tomato sauce in a pot on the stove while you are cooking the sauce. Canned sauce always tastes better when it has been cooked a bit. You can also add seasonings to the sauce at this point. I add Italian Seasoning and garlic.
- If you want to make this a meal, serve the Spaghetti Pie with a loaf of garlic bread and a green salad.
- You can add pepperoni to this recipe also.
- You can use almost any other kind of cheese you have on hand.
